It's Chanukah time! And you don't have to be Jewish to enjoy these traditional recipes with some zest. Executive Chef Julian Medina, owner of one of our favorite Mexican restaurants, Zócalo, shares his family favorites with SupermarketGuru.
Ingredients 5 zucchini 2 eggs 1/2 cup of matzo meal 1/2 shaved sweet onion, Vidalia or Maui 1 Tbsp kosher salt 1/4 cup oil for frying
Steal This Recipe® step-by-step Instructions 1. Peel and shave zucchini (only the green part) very thin with a grater 2. Add the onion, eggs, salt, and matzo meal 3. Mix well and let it cool in the fridge for 30 minutes 4. Heat the oil in a pan at 350 degrees 5. Add one tablespoon of the mixture and fry (do not fry more than 6 pieces in the pan at one time) until golden brown 6. Place them in a platter on top of a paper towel and sprinkle more salt if needed 7. Chef Julian Median serves this with a dollop of sour cream and chopped chives
