Ten Dollar Dinners: Cavatelli with Broccoli

This week Kathy shares her quick and easy recipe for Cavatelli with Broccoli - this recipe makes a mountain of food – enough to feed an army, not just the family! (Cavatelli is the name of a shell-shaped pasta that has slightly rolled-in edges). Kathy's comments: this is another staple in our house. When frozen broccoli and frozen Cavatelli are on sale, I always buy several bags of each and keep them in my freezer. This is a quick, easy and affordable meal that everyone in my family enjoys. I did realize, however, when I made this the other day, that I may have to double the recipe now ... everyone was looking for more – so here it is doubled and it stills comes in under $10! Also, this dish tastes good the next day as a cold pasta salad. What You Need From the Store: (Prices sourced from ShopRite.com) 2 x 1lb Packages of frozen Cavatelli $4.18 2 x 1lb Packages of frozen broccoli florets $3.98 1 Can chicken broth $1.00 Total $9.16 From Your Pantry: Minced garlic, fresh or dried, to taste 4 Tablespoons olive oil Grated cheese What to Do Boil the Cavatelli according to package directions. In the meantime heat the olive oil in bottom of pan. Throw in the frozen broccoli and sauté for about 5 minutes. Add the chicken broth and garlic and continue to cook the broccoli until it is tender. If the pieces of broccoli are large, I usually cut them up a little after it is cooked. Once the Cavatelli is done, drain and add to the pot with the broccoli.
