Myrna's Skinny Crisps and Pancake Mix

Last week Phil reviewed a great new products in his 5 New Products in 5 Minutes weekly video - Skinny Crisps Gourmet Crackers Seeded Flavor (they got 97 out of 100, in case you're wondering).

Myrna's Skinny Crisps are made by Myrna in Colorado and come in the following flavors: White Sesame Seeds, Cinnamon Crisps, Chocolate Brownie Crisps, Black & White Sesame with Fennel Seeds, Plain Janes and Toasty Onion. These crisps are wheat and gluten-free (and dairy and soy free come to think of it) and low in carbohydrates, but the best thing about them is: they are AMAZING – the taste and the flavors; amazing – because not only are they Allergy Friendly, but they are also that elusive combination of delicious and nutritious!

Each flavor is delicious in its own way – even the Plain Janes, which make a great substitute for bread or crackers with soup or a salad. The Chocolate Brownie Crisps are a perfect, seemingly indulgent treat and Cinnamon Crisps are a perfect breakfast, or anytime snack. The White Sesame Seeds and Black & White Sesame with Fennel Seeds (obviously to be avoided if you are allergic to sesame seeds) would be fit to serve on any entertaining occasion, able to be dressed up, or dressed down, or stand by themselves and the Toasty Onion would make the perfect healthy substitute for those unhealthy, huge bags of chips that we all love to tuck into every so often (a lot of which contain hidden allergens in the small print of the ingredients).

Along with these crisps, Myrna also makes an amazing pancake mix – I know, I said 'amazing' before, but it's true! Myrna suggested I add some vanilla to the mix to perfect the flavor, but I used ground cinnamon and it was delicious. I didn't tell Myrna, but my plan was to try the mix without the suggested use of an egg and see how it came out (as so many of us have egg allergies these days) – well let's just say, it worked fine – a pancake has never disappeared from a plate so quickly ... I melted a tablespoon of butter and substituted water for the milk and egg suggested on the directions, (you might have to play around with the quantities to get the consistency you like). It looked like it there might be a problem with sticking, but a spatula was all that was needed to loosen the pancake. Maybe it's simply been so long since I've eaten a pancake, but the combination of great taste, great nutrition and no allergens is a heady mix!
