Flyin' Hawaiian Burger LBS Las Vegas

This wackyFlyin' Hawaiian Burger recipe comes to us courtesy of Chef Anthony Meidenbauer from the new Vegas burger joint - LBS. Located in the Red Rock Casino Resort & Spa, one of Sin City’s top resorts, LBS eschews the pomp and circumstance of many of the city’s hot spots and provides a classic roadhouse aesthetic with a modern spin, offering a menu of burgers, salads and sides, as well as a full bar featuring over 40 microbrews and artisanal beers from around the world.
For patrons who prefer to invent their own creation, there is a “Do It Yourself” menu which allows diners to choose the type of burger, the number of patties and select from a huge assortment of toppings. Committed to eco-friendly, all-natural, and local, hormone-free products, LBS uses only dry-aged, grass-fed beef, free range, hormone-free poultry and Chef Meidenbauer even creates the LBS Veggie Burger—as well as a majority of the menu ingredients—in-house. And they even use biodegradable take-out containers and utensils.
The specials menu is where the “Flyin’ Hawaiian", burger can be found - a Spam burger created in ode to Philadelphia Phillies star-player Shane Victorino, along with the “Old Blue Eyes", a hamburger tribute to Frank Sinatra that features a fried egg on top and even seasonal burgers like the “New Year’s Eve Burger” with truffles and lobster tail or the “Thanksgiving Burger", a turkey burger served on a wheat roll with stuffing, cranberry relish, and a gravy-inspired aioli.
About the Chef: born and raised in upstate New York, Meidenbauer earned an Associates’ Certificate in Culinary Arts before attending Buffalo State College to major in Hospitality Administration. Ready to gain hands-on culinary experience, Meidenbauer headed to Las Vegas where he immediately immersed himself in the hotel and resort fine dining scene, working his way from a sous chef position at the Holiday Inn Select to his first executive capacity as Assistant Chef at the Bellagio. He has worked in some of the most popular and successful kitchens in Las Vegas including the Wynn Las Vegas Hotel and 3950 Restaurant at Mandalay Bay.

Flyin' Hawaiian Burger Ingredients:
4 Hawaiian sweet roll
2 cans of SPAM
4 tablespoons Teriyaki sauce
1 Cup Daikon sprouts
1 Cup chopped lettuce
Roasted Pineapple Relish (*recipe to follow)
Chili mayo (*recipe to follow)
Lomi Lomi Tomato (*recipe to follow)

Roasted Pineapple Relish Ingredients (makes 4-6 servings):
1 Pineapple
1 Jalapeno
½ Cup Teriyaki Sauce
Salt and pepper to taste

Chili mayo Ingredients (makes 4-6 servings):
1 Cup mayo
Juice of 1 lemon
1.5 Tablespoon of Sambal Olek chili paste (available in the specialty or Asian section of the supermarket)
Salt and pepper to taste

Lomi Lomi Tomato Ingredients (makes 4-6 servings):

5 Roma tomatoes
2 Green onions
¼ Red onion
Salt and pepper to taste

 

Steal This Recipe® Step by Step Instructions for the *Roasted Pineapple Relish:
Heat oven to 400 degrees.
Peel and core 1 fresh pineapple, dice into large chunks.
Slice 1 fresh jalapeno.
In a bowl toss jalapeno and pineapple with 1?2 cup of teriyaki sauce and place on a roasting pan.
Place in a 400 degree oven for 40 minutes or until tender and slightly caramelized, allow to cool to room temperature.
Place mixture in a food processor and pulse to a relish-like consistency, season with salt and pepper to taste.

Steal This Recipe® Step by Step Instructions for the *Chili Mayo:
Place 1 cup of mayo in a mixing bowl and add 1.5 tablespoon of Sambal Olek chili paste, juice of 1 lemon and blend smooth.
Season with salt and pepper to taste.
Add more chili paste for spicier or less for a more mild sauce.

Steal This Recipe® Step by Step Instructions for the *Lomi Lomi Tomato:
Cut the Roma tomatoes in half and scoop out the seeds and juice, dice the remaining tomato flesh into 1?4 inch dice and place in a mixing bowl .
Finely julienne 2 green onions (green portion only) and add to the tomatoes.
Finely chop 1?4 of a red onion and add to the tomatoes.
Season with salt and pepper to taste.

Steal This Recipe® Step by Step Instructions for Flyin’ Hawaiian Assembly:
Slice spam into 1?2 inch slices and place into a hot skillet.
Brown on both sides.
Once the meat is browned add 1 tablespoon of Teriyaki sauce and reduce slightly to glaze the spam.
Slice the sweet buns open and spread chili mayo on each half, add pineapple relish to bottom half of bun, place the Teriyaki glazed spam on top of the pineapple relish.
Top spam with lettuce, Lomi Lomi tomatoes, and Daikon sprouts.
Top it off with the upper portion of the bun and enjoy!
