Here's a great low-fat cake recipe created by Chef Chris Larson. Delicious and guilt free, with a little caffeine kick - what could be better for an afternoon pick-me-up?
Low-Fat Red Devil's Caffeine Cake Ingredients:
1 1/2 cup cake flour
1 tsp. baking soda
1/8 tsp. salt
2 tbsp. flour for pan coating
3/4 cup unsweetened applesauce
1 cup turbinado natural sugar
2/3 cup unsweetened chocolate morsels
2 eggs unbeaten
1 tsp. vanilla extract
3/4 cup strong coffee
Vegetable oil spray
Instructions:
Preheat oven to 350 degrees.
Spray a 13x9x2-inch pan with vegetable oil spray; then dust with flour.
In a large mixing bowl, sift together flour, salt and baking soda.
Whisk in applesauce, sugar, eggs, vanilla, coffee and 1/2 of the melted chocolate; beat for 1 minute by hand.
Add remaining chocolate and beat for 2 more minutes until chocolate is fully incorporated.
Pour into pan and immediately place on middle rack of preheated oven. Bake 35 to 40 minutes, or until a toothpick inserted into the center, comes out clean.
Let cool in the pan for 10 –15 minutes, then run a knife around the outside of the pan until the cake easily slides out.
Allow the cake to fully cool on a rack before cutting or frosting.
Sprinkle top with powdered sugar or spread with instant low-fat chocolate pudding or whipped cream.
