Vanilla Coffee Mousse

This elegant and sophisticated dessert is good enough for company

Who doesn't like the light and luscious texture of a mousse? This one is elegant enough for company with a sophisticated flavor from the combination of vanilla and coffee.

This recipe makes 8 servings of about 4 oz each.

Vanilla Coffee Mousse Ingredients:
1 cup vanilla-flavored coffee, brewed strong, and chilled
10 ounces cottage cheese, creamy style
1/2 cup white granulated sugar
1 cup heavy cream, whipped
3 tablespoons grated dark chocolate (Valhrona or similar)
2 egg whites
8-10 ladyfinger cookies

Directions:
In a medium size bowl, blend together the creamed cottage cheese, sugar, and 1/3 cup of the brewed coffee.
In a separate bowl, whip the cream and then fold it gently into the cottage cheese and coffee mixture along with 2 tablespoons of the grated dark chocolate.
In a very clean and dry glass or copper works bowl, whip the egg whites until stiff.
Fold them into the mousse mixture.
In a shallow bowl, pour in the remaining coffee and use that to quickly dip each ladyfinger biscuit until dampened but not saturated.
To serve, place a heaping spoonful of the mousse into a parfait glass or pretty dessert bowl, cover with half a cookie, then top with the mousse.
Repeat until mousse and cookies are all used up.
Sprinkle each dish with remaining chocolate and serve immediately.
